Savory closes $201.5 million fund as startups raise capital

October’s venture activity showcases a solid investment into Utah’s defense industry, as well as a flurry of activity across a variety of industries at the earliest stages. At the fund level, Savory announced a big infusion of venture capital flowing into Utah’s food and beverage sector. Overall, Utah’s venture ecosystem continues its forward momentum into a wider base of sectors as our innovation economy continues to grow and diversify.

In May, we highlighted Fortem’s $25 million commitment from Lockheed Martin. At the end of September, Fortem Technologies closed a second tranche of an overall $50 million Series B, also led by Lockheed Martin. The investment will help Fortem scale manufacturing and expand deployment of its SkyDome counter-drone systems. Combining radar, AI-powered command-and-control software and autonomous interceptors, the technology is designed to address growing demand for airspace security. With military and government customers, including the U.S. Army and Department of Homeland Security, Fortem illustrates Utah’s growing position in defense technology and the commercialization of advanced engineering.

Park City-based Guardrail Technologies raised nearly $3 million across two seed rounds led by Filter Fund Venture Capital. Its platform monitors and governs AI agents operating within organizations, helping companies manage permissions, security and accountability. The company plans to use the funding to support international expansion, including growth in Australia and entry into Asian and European markets.

Chatsi secured a $2.5 million seed financing commitment led by Jonathan Ord, co-founder of DealerSocket. The company is developing AI sales agents for ecommerce businesses, particularly in industries where customers need detailed product information before making a purchase. Its focus includes automotive aftermarket, powersports and electronics.

Lehi-based Adminify received an undisclosed investment from Gray Line Partners to expand its AI platform, which helps franchise networks and multi-location businesses manage customer communications, lead generation and appointment scheduling.

RefloDx, based in North Salt Lake, raised a $2 million seed round with participation from Crocker Ventures, Wild Tree Ventures, Convoi Ventures, Nucleus Fund, Park City Angels and TransAtlantic Angels. The company is developing SondeFlux, a wearable ultrasound device intended to detect reflux in the upper esophagus. The funding will support further development and multi-center clinical validation.

Beyond individual startup financings, Draper-based Savory Fund closed its third investment fund at $201.5 million. Savory is the firm behind the breakout growth of Utah-based restaurant category leaders like Swig and Mo’ Bettahs. The fund is already 35% deployed across four restaurant brands, and demonstrates that Utah is managing substantial capital in the food and beverage space.

October’s venture activity continues to show an innovation economy gaining both depth and diversity. Utah companies are attracting capital to solve problems across national security, healthcare, commerce and business operations, and food and beverage, with local investors helping finance that growth. As more companies translate research, engineering and emerging technologies into commercial products, Utah is building an ecosystem for specialized expertise to take root.
